Frozen Peanut Butter and Bananas

Frozen bananas and peanut butter make a nice snack on a hot afternoon.

Frozen bananas and peanut butter make a nice snack on a hot afternoon.

The Tiny Kitchen Assistant is indignant that I haven’t shared this before. I’ll let him tell the story.

“So you take the banana — not green, but not really mushy — and cut it into lots of circles. Then you put some peanut butter in the middle. Mom likes the crunchy stuff from Trader Joe’s, but I like the chocolate one. [Dark Chocolate Dreams from Peanut Butter & Co.] And then you freeze them for a couple of hours, and then eat them. They’re really yummy, except for the strawberry ones that we tried. They sounded really good, but the strawberries get all icy-gross and they’re just not good. But the bananas are creamy and I like that.”

So there you have it: summer snack time.

I may have to try this. I bought too many bananas this week. I’ve been doing sorbet where I freeze a sliced banana and some sliced strawberries, then blend them with just enough milk to help them blend. Yum! Also good with frozen blueberries or with cocoa powder and peanut butter.

We ALWAYS have too many bananas. Or no bananas. There’s no in between.
