Lazy Chicken Tacos (or Burritos)

Salsa. Chicken. That's it.

You know the day where you wake up in the morning, think you have it all under control, and then suddenly remember that you need to be someplace after work and won’t have time to make dinner? This is the meal for that night.

All you need are two ingredients and a slow cooker.

If you’re feeling really ambitious and want to do this burrito-style, toss some rice into the rice cooker and heat up leftover (or canned) black or pinto beans when you get home.

Ingredients

  • Boneless skinless chicken breasts (can be frozen)
  • Jar of salsa

Instructions

Put the chicken in the slow cooker. Dump the salsa over the chicken. Set slow cooker to low. Go to work.

While you’re out, grab tortillas, shredded cheese, sour cream, guacamole… whatever your favorite ingredients may be. I usually have most of these things on hand, anyway.

Use two forks to pull the chicken into shreds. Serve.

Results

Gourmet? No. Easy? Yes. As easy as take-out. And even a Tiny Kitchen Assistant will eat it because Tacos. Are. Fun.

    This is one of my all-time favorite recipes. Lately I’ve taken to adding corn and black beans. Still easy, even more delicious.
