Ok, I’ll admit it: this is the time of year where the market seems pretty dismal. Sure, there’s plenty of stuff for sale, but I just can’t get excited about beets in the same way that I do about a juicy nectarine. Nonetheless, this buttered beets recipe from Whole Foods does look good, doesn’t it? Maybe that’s just the butter talking.

Here’s a yummy recipe for butternut squash: Preheat your oven to 450. Peel and cut the squash into 1-inch chunks. Toss with olive oil, kosher salt and pepper and scatter on a baking sheet in a single layer. Bake for 20 minutes, or until cooked through.

Roast beets with a little oil, cool till you can handle them, slice, drizzle EVOO, some light vinegar, a little smoked sea salt, and some fresh chevre. maybe a little baby rocket or, if you have a friend with a hot house this time of year, maybe a little sorrel… Mmmmm….
